Okra Fries
These crispy okra fries are proof that you can’t eat just one. Serve with Harissa Tzatziki for an extra zing.
I have to thank Sophisticated Caveman for this inspiration. In Greek kitchens, okra is typically cooked in a stew, smothered in tomato sauce, until it is an indistinguishable, slimy mess. I was never a fan. But this takes okra to a whole new level. Deliciously crunchy, and the seeds provide an extra “pop” on the tongue. These could be the Whole30 definition of “food with no brakes” if they weren’t so good for you! Okra packs a powerful nutrient punch, so you eat too many and your body will thank you. It’s low FODMAP too.
The Harissa Tzatziki is so good with these, simply add Harissa paste to your liking to the plant-based Tzatziki recipe.
