I am not sure why it’s taken me this many years to publish this recipe. It’s a staple, and I guess, sometimes, you just forget about sharing the most obvious! It’s simple, flavorful, and comes together in minutes. This is one of the rare occasions where I prefer garlic powder to fresh garlic cloves. I think it has a more subtle flavor. The fresh cloves are strong and have a more pungent, raw flavor, but it’s really up to you and how you want your finished dressing to taste. Definitely invest in a good quality Greek olive oil to make this recipe its most authentic. Mythology is my preferred brand to purchase in the US. It’s pricey, so buying in the large can is the most value. And once you use this, you won’t go back to grocery store oil, I promise.
